Grilled Chicken Burger with Thousand Island Sauce

Here is a very simple and quick recipe for a family favourite.

Serves 2

Ingredients:

2 large chicken breasts
4 soft baps
4 slices of cheddar cheese (preferably smoked)
Lettuce
Cucumber slices

For the marinade:
2 tablespoons butter at room temperature
1/4 teaspoon ground turmeric
1 teaspoon ground corriander
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1 teaspoon fennel seeds
1 teaspoon dried thyme

For the Thousand Island Sauce:
2 tablespoons tomato ketchup
2 tablespoons mayonnaise
1/2 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1 large or 5 small pickled gherkins

Method:

  • Add all the ingredients for the marinade together and mix. When combined rub all over chicken breasts and leave to marinate for at least two hours or overnight in the fridge.
  • In the meantime make the Thousand Island Sauce by mixing all of the ingredients together.
